Meat is considered acidifying because its content of sulfur-containing amino acids is 2 to 5 times higher than of plants – grains and legumes, for example. In contrast, vegetables, especially green ones, are the food type that is most alkalinizing. Consequences of a surplus of acidity include urine that is more acidic, heightening the risk of kidney stones, and the body’s use of its own muscles (glutamine) to lower its level of acidity. Eating more green vegetables therefore helps to preserve the health of your muscles and kidneys.
