Buckwheat is good for the wallet but also for the health. It contains soluble fiber and fagopyritols, both of which help control blood sugar. Unlike wheat, it does not contain gluten. Buckwheat provides all eight essential amino acids in the right proportions, thereby providing high-quality protein.
