Kale is a food of high vitamin and mineral content that has been growing in popularity. One cup of kale provides 134% of our daily requirement of vitamin C, 684% of vitamin K and 204% of vitamin A – all for only 33 calories. It also provides generous amounts of calcium, potassium, iron and many anti-inflammatory and anti-cancer compounds including 45 different flavonoids and glucosinolates. Fortunately, cooking kale does not destroy most of its benefits.
