The nitrates found in many vegetables, including leafy greens and beets, act as arterial dilators, improving circulation throughout the body – brain, muscles, genitals. They thereby decrease blood pressure and improve performance on many levels including the mental, athletic and sexual.
In addition, the colour of the beet is an important clue. It is often said that the more intensely colourful vegetables are the most nutritious. Beet is a good example. It is also the most antioxidant vegetable.
